Bush Tomatoes have been a staple of the Indigenous desert dwellers of Central Australia for many thousands of years. A rich source of minerals, particularly potassium, they are also high in vitamin C. It is about the size of a small grape and is considered “ripe” when it has dried on the bush and resembles a raisin.
These 3m high grey-blue shrubs are found throughout Australia. Dried Native Saltbush flakes are a delightful complement to many a dish. They have a salty, herbal flavour, and are very versatile. Rich in protein, antioxidants and minerals.

Grown in South Eastern Australia, the Native Peppermint Gum trees grow to about 30 metres; the leaves have subtle minty overtones. Used a lot in earlier colonial times for making “Billy Tea.” It also works well in sweet and savoury dishes.
Grown by Indigenous communities in the Northern Territory, this plant was originally used for medicinal & ceremonial purposes. Early European settlers called it the “the Five-Spice plant” due to its fragrant mix of flavours, predominantly Basil, Sage and Mint.
